No worries though, making from scratch queso and other creamy cheese sauces with your favorite fromage — cheddar, Monterey jack, Parm, blue, you name it! — is so, so easy. Here’re my five favorites, all gluten-free:
Topped with beans, chorizo queso con carne, more cheese, and DIY pickled jalapeños then served with an assortment of dips, a platter of these Chili’s-inspired chips will surely disappear quickly!
There’s no need to bake this mac and cheese. Simply boil your favorite gluten-free pasta and coat with a rich, better-than-from-a-box cheese sauce. Scale up quantities (and pot sizes) to make enough for a crowd!
This is my go-to queso recipe to enjoy by the mugful with tortilla chips, but when used in combination with taco-seasoning-packet-free seasoned beef, tomatoes and chopped scallions you’ve got a tasty homemade take on Taco Bell’s Nachos Supreme.
You’ll need to whip up a batch of short ribs Bordelaise before making this classy take on a French Canadian classic, but trust that all the effort is worthwhile. Fries are drizzled with a Parmesan and cave-aged Gruyere Mornay sauce, fresh mozzarella and shredded short rib gravy.
An unexpected combination, Maytag blue cheese sauce is drizzled over warm, store bought kettle chips and sprinkled with snipped chives to create a steakhouse favorite!
