Dirty rice. From a box. It doesn’t get much easier than this! Because sometimes you want to get a little last minute Mardi Gras celebrating on without spending a lot of time in the kitchen or much money on groceries.
How are you celebrating Fat Tuesday this year? Let’s talk in the comments or on Facebook or Twitter!
Dirty Rice
(adapted from
Preparation and Cooking Time: About 40 minutes, mostly inactive
Serves: 4
Ingredients
- 1 tablespoon canola or olive oil
- 1 pound ground beef (I used 85/15, grass fed)
- 2 1⁄2 cups (20 ounces) water
- 1 box (8 ounces) Zatarain’s Original Dirty Rice Mix
- Hot sauce, such as Tabasco Original Red or Crystal (optional)
Instructions
Set a medium (4-quart) pot over medium heat, warm oil until shimmering. Add beef to pot, crumble and cook just until browned, about 5 minutes or so (it doesn’t need to be cooked through, just browned on the outside, it cooks further along with the rice).
Add water to the pot, increase heat to high and bring to a boil. Stir in rice mix, return to a boil. Cover pot and reduce heat to low; simmer for 25 minutes. After 25 minutes the water should be nearly all absorbed; stir/fluff rice, re-cover pot and allow to rest for 5 – 10 minutes before serving with hot sauce.
