Ah, the age-old relationship dilemma: one person loves to eat XYZ, the other not so much. For my folks, acorn squash is one of those things, and my self-appointed challenge this fall was to come up with a couple ways to prepare it that everyone would enjoy.

The charred fall vegetable tacos were a big hit with them both, but when Dad showed up at home with the BIGGEST acorn squash from Trader Joe’s — after all, they’re all sold for a buck and change no matter the size — tacos alone were not going to cut it. And they were definitely looking for something a little less rich and involved than pumpkin stuffed with everything good.

If you love Mexican food and find yourself in Sausalito, you must check out Copita Tequilaria y Comida. They serve very fresh, seasonally-inspired menu that also happens to be totally gluten-free (to be sure, check the bottom right of the menu for the magic words “Today’s menu is gluten-free” or ask your server). My first visit, I fell hard for their pork al pastor tacos with spit-roasted pineapple and they’ve been on my mind ever since. Happily, these healthy, flavorful tacos are incredibly easy to re-create at home!

I don’t know about you, but I’m not ready to give up summer yet. (Possibly because summer in San Francisco doesn’t really start until September, so it feels as though it’s just begun at last . . . but I digress.) Sure, Labor Day has come and gone and the kids are back in school, but more than anything, I see all of that as all the more reason to whip out the four ingredients TOTAL needed to throw together these one-ingredient ice cream bonbons. We could all use these banana “ice cream” bites as a healthy after school (or work) snack, or simply as a means to eke out just a touch more of the season.
